Mini Egg Cake
If sifting through packets of mini egg chocolates and colour co-ordinating them into groups is your idea of fun, you will LOVE making this cake. I have a real weakness for mini eggs, which I always find strange as I would never usually choose to eat milk chocolate (shock horror!). I prefer a bar of dark chocolate over milk any day. I find a bar of Dairy Milk or Galaxy overwhelmingly sweet and cloying. However, there is something about the humble mini egg that I cannot resist. One of my favourite things to do with a handful of eggs is leave them out in the sun for a few minutes so the insides melt into a thick, chocolatey pool which explodes as you bite into it...
Back to the point, this cake is the epitome of Easter. It's a proper centrepiece which isn't too difficult to create (if you've got stacks of mini eggs and lots of patience!). Behind the eggs lies a tangy yoghurt vanilla sponge and a light white chocolate buttercream.
