Eton Mess Concorde Cake
Concorde cakes are traditionally made up of layers of chocolate mousse and cocoa meringue, but I've given it a lighter touch by combining it with the flavours of Eton Mess. It's a summery affair of crisp yet chewy meringue, seasonal summer fruits and a mound of whipped cream - a beautified version of the much loved pavlova.
During the hours after the cake is assembled, the meringue layers meld with the cream to create slices of chewy, sweet deliciousness, and the tart raspberry coulis on top is a delicious addition.
